Inspired by a recent team visit to the Island of Islay in Scotland, folly is bringing you a one-off evening of delicious food and gin pairings – 

Join Nick Alvis and the team at folly for an exclusive four-course dinner with gin pairings, inspired by a recent trip to the Island of Islay, the southernmost of the Inner Hebrides islands, off the west coast of Scotland.

During their trip, the folly culinary team visited the home of the famous Botanist Gin where they embarked on an exploration ofthe22 hand-foraged wild Islay botanicals which augment the nine core gin aromatics including berries, barks and seeds. Inspired by this they have created a truly special experience for their guests on Friday 26 August, paying homage to the flavors and traditions of the Hebrides.

Recently recognized in Dubai’s first ever Michelin Guide receiving the Bib Gourmand award, while also being awarded two toques in the first Gault & Millau UAE guide, folly is the place to go for the latest in culinary innovation.

The Foraging Dinner will include creative canapes (duck liver and whisky parfait, veal and wild thyme sausage rolls, and smoked halibut croquettes); a “Minty Sour” aperitivo and the main event of wood fired bread and ash butter, sandy scallops with wasabi and lemon balm, Halibut with wood sage, apple, cockles and samphire, lamb/venison with juniper and the classic neeps and tatties. A refreshing wild strawberry and elder flower meringue will finish the meal.

For the gin pairings, expect carefully crafted cocktails including the Islay Gimlet, the Windy Martini and the Folly Hanky Panky, plus a special White Negroni.

Each dish hasits own story which will be explained by Nick while you’re savoring the flavors, and he’ll also share images and insights of the Islay trip throughout the evening.

Guests can also expect a welcome drink and canapes on arrival, and a Scottish themed table set up with traditional flowers and decorations.
