Chef Mevish Appadoo, the talented Head Chef at Twine who is celebrated for his mastery of Mediterranean flavours and his ability to blend traditional and contemporary culinary techniques, will be joined by Chef Surabhi Sehgal on the night. A highly regarded plant-based culinary artist, Chef Su is known for her innovative and vibrant approach to vegan and vegetarian cuisine. Drawing inspiration from her travels and traditional family recipes, Chef Su creates dishes that focus on sustainability, wellness, and bold flavours, with an emphasis on Indian and Mediterranean influences.

The dinner will be a journey of discovery, with several unique dishes crafted to reflect each chef’s love for food, culture, and innovation. This special evening will begin with a shared experience, “Break the Bread,” a collaborative course where both chefs have worked together to create a signature Twine homemade pitta bread served with hummus and chilli oil alongside vegan-friendly cream cheese, black bean, corn, edamame, and mushroom stuffed hand pies paired with zesty tomato salsa. Each subsequent course will showcase individual dishes from both chefs, celebrating their culinary roots and expertise.

The second course, presented by Chef Mevish, is a refined dish of confit fennel slices with smoked fresh figs, fennel fondue, spinach gel, cucumber roll, dried cherry tomato, and honeyed zaatar dressing, offering a harmonious blend of fresh, smoky, and aromatic flavours. Chef Su will then take over for the third course, serving pumpkin croquettes accompanied by a rich red pepper curry and herb bulgur, a vibrant and comforting dish that celebrates plant-based ingredients with warmth and depth.

The culinary journey continues with Chef Mevish’s fourth course of slow-cooked and seared chickpeas pave, complemented by zucchini tagliatelle in a rich, spicy tomato sauce, offering a hearty and indulgent option. For dessert, Chef Su will present her coconut and chia pudding with dark chocolate granola, lotus biscoff, and fresh berries, a light yet indulgent treat to tantalise the taste buds. To round off this unforgettable experience, Chef Mevish finishes with pear in pomegranate syrup, lime crumble, caramel nuts, and pear candy, a sweet and refreshing finale that beautifully concludes the evening’s menu.
